Step 1: Prepare the Chicken

  • Flatten the chicken: Start by placing the chicken breasts between two pieces of plastic wrap or parchment paper. Gently pound them to an even thickness, about 1/2 inch, to ensure they cook evenly and stay juicy.
  • Set up your breading station: In one shallow bowl, whisk the egg. In another, mix the breadcrumbs, grated Parmesan cheese, garlic powder, and dried oregano. This will be your crispy coating!

Step 2: Coat the Chicken

  • Dip and coat: First, dip each chicken breast into the beaten egg, making sure to coat it well. Then, press it into the breadcrumb mixture, ensuring the chicken is evenly covered with that crispy coating.

Step 3: Cook the Chicken

  • Fry to golden perfection: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, carefully add the chicken breasts. Cook each side for about 4-5 minutes, until golden brown and crispy. For a healthier alternative, you can bake the chicken at 400°F (200°C) for 20-25 minutes, flipping halfway through.
  • Check for doneness: Ensure the chicken reaches an internal temperature of 165°F (74°C) to be fully cooked.

Step 4: Add the Sauce and Cheese

  • Layer with marinara sauce: Once the chicken is cooked and crispy, spoon a generous amount of marinara sauce over each chicken breast. You don’t want to drown it, just enough to cover the chicken.
  • Top with mozzarella: Sprinkle a generous handful of shredded mozzarella cheese on top of the marinara sauce. The more cheese, the better!

Step 5: Melt the Cheese

  • Toast the rolls: While the cheese melts, toast your sandwich rolls lightly until they’re golden brown and crispy. This adds a nice crunch to the sandwich.
  • Build the sandwich: Place the cheesy chicken breast on the bottom half of each roll. Add some fresh basil leaves on top for an aromatic burst of flavor, then cover it with the top half of the roll.
