Step 1: Prepare the Chicken

  • Start by placing the chicken breasts (or thighs) at the bottom of your crockpot. No need to cut or shred them just yet; they'll cook perfectly in the slow cooker and become tender as they cook.
  • Season the chicken with a little salt, pepper, and garlic powder to enhance the flavor.

Step 2: Mix the Dressing Ingredients

  • In a separate bowl, combine the cornbread stuffing mix, diced onion, chopped celery, and parsley.
  • Add the chicken broth and cream of chicken soup to the mixture. Stir everything together until it’s well combined. This mixture is what will give your casserole its creamy, flavorful base.

Step 3: Layer It in the Crockpot

  • Gently spoon the dressing mixture over the chicken in the crockpot, spreading it evenly.
