  • 2 large boneless ,skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Stuffing:

  • ½ cup shredded mozzarella cheese
  • ¼ cup cream cheese
  • ½ cup fresh spinach
  • ¼ cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • 1 clove garlic, minced

Optional Add-Ins:

  • ¼ cup crumbled feta or goat cheese
  • ¼ cup sautéed mushrooms
  • 2 slices cooked, crumbled bacon

Step 1: Prepare the Chicken

  • Start by butterflying the chicken breasts. Carefully slice them horizontally, but not all the way through, to create a pocket for the stuffing.
  • Gently pound the chicken with a meat mallet to even out the thickness. This will help it cook more evenly.
  • Season both sides of the chicken with olive oil, garlic powder, paprika, salt, and pepper. Be sure to rub it in well for maximum flavor.

Step 2: Make the Stuffing

  • In a mixing bowl, combine mozzarella cheese, cream cheese, spinach, sun-dried tomatoes, garlic, and Italian seasoning. Stir until everything is well-mixed.
  • If you’re using optional ingredients like bacon or mushrooms, now’s the time to add them into the stuffing mixture. The combination of these fillings will give your chicken a rich, savory kick.

Step 3: Stuff the Chicken

  • Carefully spoon the stuffing mixture into the pocket of each chicken breast. Don’t overstuff, as you want the filling to stay inside while grilling.
  • Secure the opening with toothpicks or kitchen twine to ensure the stuffing doesn’t spill out while cooking.

Step 4: Grill the Chicken

  • Preheat your grill to medium-high heat. Once it’s hot, place the stuffed chicken breasts on the grill.
  • Grill each side for 6-7 minutes, flipping once. Use a meat thermometer to check the internal temperature—it should reach 165°F (75°C) for perfectly cooked chicken.
