Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 box of stuffing mix
  • 1 cup chicken broth
  • 1/2 cup butter
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 cup frozen peas optional

Instructions
 

Prepare the Crockpot:

  • Lightly grease the inside of your crockpot with butter or non-stick cooking spray. This will keep the chicken and stuffing from sticking and make for an easier cleanup.

Add the Chicken:

  • Place the chicken breasts (or thighs) at the bottom of the crockpot. Season them with salt, pepper, and a sprinkle of dried thyme. This seasoning will ensure the chicken gets tender and flavorful as it cooks.

Mix the Stuffing:

  • In a bowl, combine the stuffing mix with chicken broth and melted butter. Add in the chopped onion and minced garlic for an extra layer of flavor. If you’re using optional veggies like frozen peas, stir them into the stuffing mix as well.

Top the Chicken with Stuffing:

  • Spread the prepared stuffing mixture evenly over the chicken in the crockpot. The stuffing will absorb the chicken’s juices as it cooks, creating a flavorful, hearty layer on top.

Cook on Low:

  • Cover the crockpot and cook on the low setting for 4-6 hours. The chicken will become tender and juicy, and the stuffing will soak up all the delicious flavors from the chicken.

Check for Doneness:

  • When the chicken is fully cooked and shreds easily with a fork, it’s ready to serve. For a crispy topping, you can place the crockpot insert under the broiler for a few minutes to give the stuffing a golden-brown finish.
