  • 2 boneless skinless chicken breasts
  • 3 cups broccoli florets
  • 12 oz fettuccine pasta
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 4 oz cream cheese
  • 2 cups chicken broth
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt & ½ teaspoon black pepper
  • 1 tablespoon olive oil

Optional Additions & Substitutions:

  • Rotisserie chicken
  • Mushrooms or spinach
  • Red pepper flakes
  • Low-carb alternative

Instructions
 

Step 1: Prep the Chicken

  • Lightly season the chicken breasts with salt, pepper, and Italian seasoning.
  • (Optional) Sear the chicken in a skillet with olive oil over medium heat for 2-3 minutes per side. This adds depth of flavor but isn’t required.

Step 2: Add Ingredients to the Slow Cooker

  • Place the seasoned chicken breasts at the bottom of the slow cooker.
  • Add the chicken broth, minced garlic, and cream cheese (cut into cubes).
  • Cover and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is tender.

Step 3: Shred the Chicken & Make the Sauce

  • Remove the cooked chicken, shred it with two forks, and set it aside.
  • Stir in the heavy cream, Parmesan cheese, and broccoli florets.
  • Return the shredded chicken to the slow cooker, mixing everything well.

Step 4: Cook the Pasta

  • About 20 minutes before serving, cook the fettuccine according to package instructions.
  • Drain and add the pasta to the slow cooker, tossing everything together to coat it in the creamy Alfredo sauce.

Step 5: Let It All Come Together

  • Cover and let the flavors meld for 5-10 more minutes on low.
  • Stir well, adjust seasoning if needed, and serve warm!
